~ Korean Tofu Vegetables Pancakes ~
- Ingredients-
A.
* 2 cloves of minced garlic (1 Tbsp)
* 3 oz onion, chopped
* 2 green onions, chopped (1/4 cup)
* 3 oz zucchini, chopped (lightly water squeezed)
* 1 oz carrot, chopped
* 3 oz red or green bell pepper, chopped
* 1 oz jalapeno, chopped (1 ~ 1 and 1/2 Tbsp)
* 2 egg whites
* 2 Tbsp Korean pancake powder (or flour, potato powder)
B. Seasonings
* 1/8 tsp black pepper
* 2 tsp garlic powder
* 2 Tbsp onion powder
C. For pan frying oil
* 2 ~ 3 Tbsp olive oil
* 2 ~ 3 Tbsp sesame oil
D. Soy sauce (optional)
E. Directions
1. Crush the tofu with a knife and squeeze the water on the cotton cloth.
2. Chop all the vegetables.
3. Separate egg whites.
(Put on disposable plastic gloves on your hands and mix well.)
5. Place 1 Tbsp olive oil and 1 Tbsp sesame oil on medium high heated pan, and scoop 2 ~ 3 Tbsp each of the mixture into a pan.
6. When the bottom is firmly cooked, turn it over. Press lightly on the pancakes with a spatula.
